Research by UC Berkeley has awarded blue the title of rarest flower color. Fewer than 10% of flowering plants produce blue blooms, and many of those that appear blue are actually variants of purple or violet that reflect light in a way that tricks the eye.
This rarity comes from the fact that plants lack a natural blue pigment. To achieve a blue hue, flowers have to modify red pigments (anthocyanins) through a complex mix of pH changes and chemical bonding.
